Brining 101

--WHAT IS A BRINE?--

  • Brines are a salt water solution used to soak meat in before cooking
  • It is an easy and convenient way to moisten, flavor and tenderize meat
  • Brines work via the process of diffusion
    • The brine has higher salinity then the meat; this causes the salt ions and other small molecules to diffuse into the cells of the meat
  • Diffusion of salt molecules into meat causes two things:
    • Meat cells absorb and hold more water, making the meat juicier when cooked
    • Breaks down the meat cells, making the meat more tender and trapping additional water in the meat
