Brining 101
--WHAT IS A BRINE?--
- Brines are a salt water solution used to soak meat in before cooking
- It is an easy and convenient way to moisten, flavor and tenderize meat
- Brines work via the process of diffusion
- The brine has higher salinity then the meat; this causes the salt ions and other small molecules to diffuse into the cells of the meat
- Diffusion of salt molecules into meat causes two things:
- Meat cells absorb and hold more water, making the meat juicier when cooked
- Breaks down the meat cells, making the meat more tender and trapping additional water in the meat
