Roasted Pork Loin with Apples and Sweet Potatoes

Flavor Recommendations: Savory Chipotle, Mesquite Apple. Garlic & Herb F.I.T. BrineTM

INGREDIENTS (4 servings):

  • 2 lbs pork loin
  • F.I.T. BrineTM, one of the recommended flavors divided into:
    • Brining Spices - 1oz (approximately half of 1/3 cup) of brine for every pound of pork loin
    • Seasoning Spices - 1oz (approximately half of 1/3 cup) of brine for every 3lbs potatoes/apples
  • 2 Tbsp olive oil
  • 2 Gala apples, cored, quartered
  • 1 large sweet potato, scrubbed, cut into 1-inch thick wedges

DIRECTIONS:

  • Brine pork loin pork loin per instructions on the package with Brining Spices
  • ~Optional~ For added flavor, strain the brine and set the spice/herb mixture aside
  • Heat oven to 400°F.  Rub 1 tbsp of the olive oil over the pork and place on a rimmed baking sheet.  
  • ~Optional~ if you strained the brine, rub spice/herb mixture all over the outside of the pork loin
  • Put the apples and sweet potatoes in a bowl and toss with remaining 1 tbsp olive oil and Seasoning Spices
  • Put the apples and sweet potatoes in the baking sheet around the pork loin 
  • Roast 10 min, then reduce oven temperature to 350°F and continue roasting until pork registers 145°F on a meat thermometer and the apples and sweet potatoes are tender. 
  • Transfer pork to cutting board and let it rest for 10 min.  Thinly slice it into medallions and serve.
