Crab & Cornbread Stuffed Mushrooms

Garlic & Herb Jamaican Jerk Main Dishes Savory Chipotle Seafood

INGREDIENTS (8 servings):

  • 1oz (approximately half of 1/3 cup) F.I.T. BrineTM 
  • 8 large cap portabella mushrooms
  • 2 cups cheddar cheese
  • 1 cup parmesan cheese
  • 1 large diced onion
  • 1 pound crabmeat
  • 1 pound premade cornbread
  • 1 tbsp garlic
  • 1 tbsp olive oil


  • Clean the portabella mushroom caps and remove the stems
  • Line a baking sheet with parchment paper and place the mushrooms on the sheet
  • Dice the mushroom stems and the onion
  • In a pan or skillet over medium heat, add olive oil, garlic, mushrooms, and onion and stir-fry till tender
  • Tear apart the corn bread till roughly crumbled
  • In a large bowl, mix together the cooked mushroom stems and onions, crabmeat, cornbread, and cheddar cheese
  • Add 1oz (approximately half of 1/3 cup) F.I.T. BrineTM and mix thoroughly
  • Spoon, in even proportions, the crab and cornbread mixture onto the portabella mushroom caps. Sprinkle parmesan cheese over each
  • Bake at 350° for 25 minutes or until golden.
